Recently I have been thinking about all the good things that we should be eating at this time. There is much said about Gluten Free. Therefore I can across this recipe and gave it a try.
Have a try...tasty
1 stick (¼ pound) butter or margarine (oleo)
4 ounces baking chocolate
4 eggs (at room temperature)
½ teaspoon salt
2 cups sugar
1 teaspoon vanilla extract
1 cup soy flour
¼ cup cornstarch or potato starch
2 teaspoons baking powder
1 cup chopped nuts (optional)
1 cup chocolate chips (optional)
[Image] Be cautious with the nuts. People with allergies generally have multiple allergies.
Steps
Oil a 13x9 pan. (Do not use Crisco, or the ingredients will stick to the pan.) Set the pan aside.

Melt the chocolate and butter together in saucepan or microwave. Let cool awhile.
Whipped eggs and salt
While cooling, beat the eggs and salt in a bowl with a fork or whisk until light and fluffy.
Gradually add sugar & vanilla. Beat well with fork.
Add chocolate/butter mixture, flour, baking powder, and cornstarch gradually, and mix well with a fork.
o Soy flour has a pretty distinctive flavor that some may not like. Experiment with other gluten free flours; like tapioca or rice flour.
Add nuts/chips as desired.
Pour the mixture into the pan. Mixture will be thick. Spread in oiled pan. Top with more nut halves if desired.
Bake at 350oF for 25 minutes, or until it passes the toothpick test.
Cut when cool.
